Breakfast Burrito

This is a simple breakfast burrito recipe I came up with the other day. It's broken down to a single portion so just multiply by how many people you're feeding.

Ingredients
     4 eggs
     1/2 cup uncooked rice
     1/2 cup water
     1/3 cup grated cheese ( I use monterey and cheddar but you can use anything)
     Salsa to taste
     Salt and pepper to taste
     Hot sauce (optional)
     1/4 cup milk
     1 tortilla (burrito size)

Directions
     1. Boil the water add the rice cover and remove from heat.
     2. Crack eggs into a bowl and add milk. Whisk the eggs and milk together, and add salt and pepper to taste.
     3. Add all remaining ingredients but the tortilla to a medium frying pan and scramble
     4. Serve on tortilla
   
For a backpacking trip you can mix all the ingredients in a boil bag at home then freeze it. Then all you have to do on the trip is put the bag in boiling water to cook and serve on the tortilla. Another tip is to warm the tortilla by placing it on the lid for your boiling water.
